Demonstrated knowledge of kitchen procedures, preparation techniques and product . Skill designation tested. Categories assigned commensurate with experience, skill and knowledge. Hotel/Resort or free standing experience is expected. At least four years’ experience in sushi-sashimi preparation and service, or experience and knowledge of wok station production and noodle bar operations.
